Recently our family has been trying to add more vegetables into our diet. We came across a yummy recipe for Curry Cauliflower. I’ve never been much of a fan of cauliflower before (or curry) – until I learned to prepare it this way! Now it’s our new favorite veggie!! If you are new to this cruciferous vegetable, the hands-down, best-tasting way to prepare it is by oven roasting. You just need 3 simple ingredients…..
Roasted Curry Cauliflower
– 1 head of cauliflower (washed/dried/cut into florets)
– olive oil
– curry powder
– season with salt and pepper (not necessary, but optional)
Preheat oven to 350 F.
Place cauliflower florets in an oven safe casserole dish. Drizzle a little olive oil over cauliflower, sprinkle curry powder on top.
Toss, and bake for 1 hour – until fork tender and caramelized. Yum!! (I stir about 1/2 through baking, and add more olive oil and curry powder if needed)
(Time and temp may vary. If you bake at 400 F, it may only take 40 mintues to bake)
This is a great side dish to make when you are having baked chicken or meatloaf in the oven already. Plus Cauliflower is packed with many nutrients that your body needs! Give it a try and let me know if you like it! 🙂

No, I don’t cover it. I add a little more olive oil 1/2 way through the baking, to keep it moist (if needed). Keep an eye on it, but the crispiness and caramelization is what makes it good!
