Since going gluten and dairy free a few year ago, I have missed eating those yummy Peppermint Patties after a dinner.  Last night I came across this great recipe that uses 4 basic ingredients to make homemade peppermint patties:
– coconut oil
– agave (I used honey)
– peppermint oil (*make sure that it’s safe to take internally, I used Young Living EO)
– chocolate (I used dairy free)
Easy Peasy!!

These days we read about the many benefits of coconut oil!!  Coconut oil is especially good for you if you struggle with thyroid issues, so I’ve always tried to eat at least 1 TB/day, but that’s not always easy to do.    When I came across this recipe that uses coconut oil AND peppermint essential oil (which is great to aid with digestion and many other health benefits!), it was a winner, winner!!
