This was the first year that I purchased peaches from The Peach Truck.  It took a few days for them to ripen, but when they did, they were the sweetest peaches that I’ve ever had!!

My Mother makes the best pies ever, and she passed along her fresh peach pie recipe to me.  This morning I made a pie with some of the peaches!  Some of my friends were asking for the recipe, so I’ll post it below.

*A friend shared this simple tip with me,…. if you drop your peaches in boiling water for about 30 seconds and then put them in ice water to cool – the skins come right off!!  (thanks for the tip, Cinda)  😉

Fresh Peach Pie Recipe
1  1/4 cup water
4 T. Clear Jel (or cornstarch)
1/2 cup sugar
1 tsp. lemon juice
5 T. Peach Jell-O
-dash of Cinnamon – to taste  (the secret ingredient)  😉

1 cooked pie shell
3 cups fresh peaches (more or less)  (peeled and bite-size)
Whip Cream

Shake the water and Clear Jel together in cup with lid.
Cook the first 4 ingredients in pan on medium heat, until thick.
Then remove from heat and add the Jell-O.  Let the filling cool.
Mix the cooled filling with the peaches, and pour into baked (and cooled) pie crust.
Chill, and serve with Cool Whip!

* you can use any fresh fruit in this recipe (strawberries and peaches work best).
